What is Vino Cotto?
Vino Cotto di Montillo is a rare condiment and ingredient made from premium wine grapes. It has no alcohol, no expiration date, and gets better with time. People have used Vino Cotto dating back to ancient Roman times as a natural sweetener. Vino Cotto is also an ingredient found in balsamic vinegar. It’s what gives it that delicious, sweet taste.
This unique gourmet syrup is carefully crafted in small batches to keep it from turning into wine. Its flavor is rich and smooth, with hints of grapes, figs, plums, and raisins. It’s healthy, with no added sugar, preservatives, or artificial ingredients, and it’s packed with antioxidants, polyphenols, flavanols, and energy-boosting nutrients.
Vino Cotto has a simple syrup-like texture, not thick like honey or molasses. This makes it easy to work with in sweet and savory dishes. For over 100 years in Calabria, Italy, the Montillo family has perfected the art of crafting homemade wine and Vino Cotto for their personal consumption. Guided by a deep appreciation for their Italian heritage, husband and wife team, Greg (Gregorio) and Deena Montillo embarked on a mission to share their family's culinary legacy with the world. In October 2008, they founded Montillo Italian Foods, becoming the pioneers of authentic Vino Cotto production in the United States.

Easily Craft Your Own Balsamic Vinegar & Glaze
Balsamic Vinegar: Mix Vino Cotto di Montillo with your favorite red
wine vinegar. Start with equal parts of each ingredient. Adjust to
taste. Mix well to emulsify the vinegar before serving.
Balsamic Glaze: In a medium saucepan, add 1/2 cup of your homemade balsamic vinegar. This will yield approximately 1/4 cup of glaze. Over medium heat, bring the vinegar to a boil then immediately reduce the heat to low. Stir frequently. Simmer for about 15-25 minutes until the vinegar coats the back of a
stainless-steel spoon or to a desired consistency.
1/2 cup Vino Cotto di Montillo
1/4 cup classic or extra virgin olive oil
1/4 cup red wine vinegar
1/4 tsp. Kosher salt (optional)
In a salad dressing bottle, add the ingredients and adjust each to taste. Add more Vino Cotto for a sweeter, smoother flavor. Cover and shake well. Drizzle over salads and vegetables or use as a delicious marinade.
Yield: 1 cup (8 fl. oz.)
