Thickened Vino Cotto Syrup

Vino Cotto di Montillo
1. In a small saucepan over low heat, add vino cotto, and simmer. Reduce vino cotto until the syrup sticks to a stainless steel spoon, or to the desired consistency.
2. Transfer the syrup into a gravy boat or creamer.
3. Thickened vino cotto can be served hot or cold. Use over a variety of meats, cheeses, and desserts.
